1 c Natural peanut butter (look for one with just peanuts + salt)

1/4 c Maple syrup or honey (local always best)

1/3 c Coconut flour or almond flour (for binding)

1 c Dark chocolate chips or a chocolate bar (at least 70% cacao for less sugar)

1/2 T Coconut oil (to help melt and smooth the chocolate)

How to Make:

1. Mix the filling: In a bowl, stir together peanut butter, maple syrup, and coconut flour until you get a soft, rollable dough.

2. Shape into eggs: Roll the dough into small egg shapes and place them on a parchment-lined tray. Freeze for 15-20 minutes to firm up.

3. Melt the chocolate: In a saucepan or double boiler, gently melt the chocolate chips with a little coconut oil.

4. Dip: Once the peanut butter eggs are firm, dip each one into the melted chocolate and place them back on the tray.

5. Chill: Let them set in the fridge until the chocolate is firm.
